Tasting Notes: Rose / Lychee / Turkish Delight
For Valentine’s, we’re releasing one of the most distinctive and romantic coffees we’ve ever offered — a rose-co-fermented Tabi crafted by Edinson Argote at Finca Quebraditas in Huila, Colombia.
The heart of this coffee lies in its processing. After selective harvesting with at least 90 percent ripe cherries, the lot goes through floating, a short oxidation stage, dry pulping, and an initial 24-hour fermentation to remove the mucilage. The real transformation happens next: a 72-hour controlled co-fermentation using a precise infusion of rose petals (85 percent) and lychee (15 percent), supported by specific yeast strains to guide aromatics and texture. All of this is kept below 25°C to preserve clarity and avoid over-fermentation. The coffee is then washed, dried mechanically at a stable 38°C, and rested to stabilise its structure and profile.
This technique doesn’t mask the coffee — it elevates it. The floral infusion integrates seamlessly with the natural character of the Tabi variety, creating a cup that feels intentional, expressive, and genuinely special.
