Tasting Notes: Yellow fruits / Vanilla Custard / Pear
This coffee is produced by Jorge Mira at his family-operated farm El Jaragual, located at 1,500 metres above sea level in Amalfi, Antioquia. Set in the northern area of Colombia’s central Andes, El Jaragual benefits from excellent growing conditions for producing balanced, expressive coffees.
Jorge’s background as a forestry engineer plays a key role in how the farm is managed. Sustainability and long-term thinking are central to El Jaragual, with a large part of the 150-hectare farm dedicated to forestry and native forest conservation. Coffee is grown under shade from plantain trees and other agroforestry species, supporting soil health and creating a stable, diverse environment for quality coffee production.
At El Jaragual, Jorge cultivates a wide range of varieties, combining traditional Colombian cultivars with newer plantings. This approach allows for consistency, experimentation and a clear focus on quality at every stage.
In the cup, this Yellow Bourbon is smooth, creamy and quietly expressive. We taste yellow fruits that bring gentle sweetness and clarity, paired with a soft vanilla-custard character that adds comfort and roundness. A touch of pear lifts the acidity, giving the cup a subtle, refreshing brightness without ever becoming sharp. When hot, the aroma leans towards dulce de leche, offering a warm, dessert-like fragrance before settling into a clean, balanced finish.
