Tasting Notes: Blackberries / Floral / Satsuma
This washed Pink Bourbon comes from Jairo Arcila’s farm, Santa Mónica, and highlights the clarity and elegance this unique variety is known for. The cherries were harvested at peak ripeness, then floated and hand-sorted to remove any defects. After sorting, they underwent 30 hours of underwater fermentation before being pulped, gently washed, and slowly dried in temperature-controlled conditions to preserve the coffee’s nuance and structure.
In the cup, it’s bright and refined, with notes of juicy blackberries, delicate florals, and satsuma citrus. Vibrant yet composed, it has a beautiful balance.
This micro-lot is 100 percent Pink Bourbon, a variety still under research. Thought to be a natural mutation that occurred in San Adolfo, Huila at 2100 metres above sea level, it’s prized for its complexity and high cup quality.
This is the third coffee we’ve featured from Jairo this year, following a natural Sidra and his sugarcane decaf Castillo. We’ve also worked with a few of his lots in previous seasons, and each one has shown the same care, precision, and character that make his coffees such a pleasure to roast and share.
