Description
Decaf doesn’t mean dialled down. This naturally processed Castillo from Jairo Arcila delivers a full-flavoured, sweet and satisfying cup, without the caffeine.
Produced at Jairo’s farm, the cherries for this lot were hand-picked at peak ripeness and carefully sorted before being sun-dried on raised beds in temperature-controlled conditions. Once dried, the beans underwent a sugarcane ethyl acetate (EA) decaffeination process, a method that uses natural compounds derived from fermented sugarcane to remove caffeine gently and preserve the coffee’s character. The result? A decaf that’s full of flavour, with enhanced sweetness and no harshness.
In the cup, this coffee bursts with vibrant passionfruit and dried raspberry, layered over a rounded sweetness and a satisfying, smooth body. It’s juicy, fruity, and lively, with enough richness to hold its own as either filter or espresso.
This microlot is 100% Castillo, a rust-resistant variety developed by Colombia’s coffee federation. It’s known for being productive and resilient, but here it shows how much depth it can have when grown and processed with care.
We’ve featured a few of Jairo’s coffees over the last couple of years, always with great results. If you’re after a decaf that actually tastes like something special, this is it.
